Eggs in Maple Ham Cups

Lorna's recipe from Rightathome.com

Ingredients:
2 Tablespoons unsalted butter or margarine, melted
12 slices (about 8–10 ounces total, prepackaged or from the deli counter) Black Forest or smoked Virginia ham, cut a little thinner than a slice of American cheese
2 Tablespoons maple syrup
2 Tablespoons finely chopped fresh dill or chives; if using dried herbs, use 1 1/2 teaspoons
12 large eggs
1/2 teaspoon salt
1/4 teaspoon black pepper

Set baking rack in the middle of oven and preheat to 400 degrees F. Use melted butter to coat inside of 12 standard-size muffin tins. Fit 1 slice of ham into each cup, pressing down gently to line cup. Spoon 1/2 teaspoon maple syrup into each ham cup, followed by 1/2 teaspoon seasonings (1/8 tsp. if using dried herbs). Add 1 tablespoon cheese, then crack 1 egg into each ham cup. Bake until whites are cooked and yolks are firm, about 20 minutes. If large bubbles form on eggs during baking, pierce them with a toothpick while they cook.
Remove the baking pan from the oven and season the eggs with salt and pepper. Using 2 teaspoons or small spatulas, carefully lift the full ham cups out and place on a serving plate. Garnish with fresh herb sprigs (if using) and serve immediately.

German Oven Pancakes

Cooking time 30-35 minutes

Preheat oven to 400 to 350 degrees

 

Oven Pancake Ingredients:

1 1/2 cup milk (2 1/2 for 2 pies)

1 tsp butter

3/4 cup flour (1 1/4 for 2)

1/3 cup and 2 tbspn sugar (2/3 for 2 pies)

3 eggs (5 for 2 pies)

1/4 tsp salt (1/4 + 1/2 tsp for 2 pies)


Apple Topping Ingredients:

6 granny smith apples

2 tsp. Lemon juice

6 tblspn Brown sugar

1 tsp. cinnamon

6 tblspn butter

 

Pancakes:

mix milk, flour, sugar, eggs and salt in blender 'til smooth. In 9' glass pie plate melt 1 tsp butter at 400* in oven for about 10 minutes. Pour mixture into hot glass pie plate(s), turn oven to 350* and bake 'til golden brown and knife comes out clean. For about 30 - 35 minutes.

 

Apple Topping:

Cut apples and put in large skillet. Add lemon juice, brown sugar, cinnamon and butter in pan. Cook until apples are soft on low heat.

Jarod's German Oven Pancakes

Jarod's Recipe

 

Ingredients:

1 stick of butter, melted

1 cup flour

1/2 tsp. salt

6 eggs

1 cup milk

 

Mix all ingredients together. Pour into 9x13 inch pan. Bake at 450 degrees F. for 20 minutes. Sprinkle powdered sugar on top before serving. 

Dad's Waffles

Dad's recipe

 

Ingredients:

1 1/4 cup flour

2 teaspoons baking powder

2/3 teaspoon salt

1 tablespoon sugar

1 cup milk

2 egg yolks, beaten thick

3 to 5 tablespoons oil (can be substituted with cream)

2 egg whites, beaten stiff

 

Sift all dry ingredients together. Mix milk and oil with egg yolks. Combine dry - and egg yolk- mixtures together, stirring until well blended. Fold in egg whites.

Makes approximately 5 waffles.

EBBC Sausage Egg Casserole

Recipe from Tami Rea and Shan Coulter

 

Ingredients:

1 pound hot roll sausage

2 cups grated cheddar cheese

4 eggs

2 cups milk

1 cup Bisquick

 

Preheat oven to 350 degrees. Sauté sausage. Drain grease, mix sausage with cheese. Grease a 9x13 inch pan. Add sausage and cheese mixture into pan. Combine eggs, milk, and Bisquick and pour into pan. Bake 25 to 30 minutes. To check for doneness insert knife into center, if still gooey bake 5 - 10 minutes longer.

Pancakes

Ingredients:

1 cup milk

1 cup flour

1 egg

3 tbsp oil

1 tbsp sugar

1 tbsp baking powder

 

Cook on griddle. You can tell it is done when bubbles pop and do not re-form.

Mom's Coffee Cake

Ingredients:

1/4 cup salad oil

1/2 cup milk

3/4 cup sugar

1/2 teaspoon salt (optional)

1 beaten egg

1 1/2 cups sifted flour

2 teaspoons baking powder

1 Spicy Topping

 

Preheat oven to 375. Mix salad oil, egg, and milk. Sift together dry ingredients. Add dry ingredients to milk mixture. Pour into greased 9x9x2 inch pan or 1 round cake plate. Pour Spicy topping on top of the batter. Bake in oven at 375, for 25 minutes.

 

Spicy Topping Ingredients:

1/4 cup brown sugar

1 teaspoon cinnamon

1 tablespoon flour

1 tablespoon melted butter

1/2 cup broken nuts

Sausage Cheese Balls

Jimmy Dean

 

Ingredients:

2 packages, (or 32 oz total) Jimmy Dean Sausage

1 1/2 cups all-purpose baking/biscuit mix

4 cups sharp cheddar cheese, shredded

1/2 cup finely chopped onion

1/2 cup finely chopped celery

1/2 teaspoon garlic powder

 

Preheat oven to 375 degrees F. Mix all ingredients together thoroughly. Form into 1 inch balls. Place on ungreased cookie sheets. Bake for 15 minutes or until golden brown. Sausage cheese balls can be frozen uncooked. Thaw and cook according to directions. For a firmer texture, add an extra 3 cups baking/biscuit mix and an extra 2 cups shredded cheese to the ingredients listed above. Makes approximately 6 dozen.

English Scones

Ingredients:

2 cups flour

4 1/2 tablespoons brown sugar

2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup butter

8 ounces sour cream

1 egg yolk, beaten

1 egg white, slightly beaten

 

Preheat oven to 400 degrees F. Mix together the flour, brown sugar, baking powder, and baking soda. Using a pastry blender, cut in butter, until mixture resembles coarse crumbs. Make a well in center. In a small mixing bowl mix together sour cream and egg yolk; add all at once into crumb mixture well. Stir with a fork until combined. Knead 10 to 12 strokes or until nearly smooth. Roll dough into a 7 inch circle. Cut into 12 wedges. Arrange onto cookie sheet, 1 inch apart. Brush egg white on top of each wedge. Bake 10 to 12 minutes. Serve warm.
